BBQ Chicken Skewers | Grill BBQ Chicken for Summer | Summer Grilling Recipe | Flavor Quotient

Ingredients:

Chicken thighs – 500 gms, skinless & boneless, cut into bite-sized pieces
For Chicken marinade:
Brown sugar – 2 tsp
Paprika – 2 tsp
Salt – 1 tsp
Chili powder – 1 tsp
Dried thyme – 1 tsp
Pepper powder – ½ tsp
Garlic paste – 1 tbsp
Olive oil – ¼ cup

For BBQ Sauce:
Tomato ketchup – ½ cup
Brown sugar – ¼ cup
White vinegar – 2 tbsp
Dijon mustard – 1 tsp
Chili powder – 1 tsp
Unsalted butter – 2 tbsp
Honey – 2 tbsp

Instructions:

Prepare the chicken marinade by mixing all ingredients listed under marinade in a small bowl. Whisk them thoroughly for even mixing.
Take the chicken cubes in a mixing bowl and drizzle about 2 tablespoons of olive oil. Give a good mix.
Now add the prepared marinade to the chicken and evenly mix it with each chicken cube. Make sure each chicken piece is coated well on all sides. Set it aside for 30 minutes while you make the BBQ sauce.
In a small saucepan combine all ingredients listed under BBQ sauce. Whisk them well with a wire whisk.
Place the saucepan on low heat and let the sauce cook slowly for 8 to 10 minutes until the sugar is dissolved completely and sauce thickens.
Transfer the prepared sauce to another bowl and let it cool.
Skewer the marinated chicken into soaked bamboo sticks.
Heat a cast iron grill pan over high heat. Once the pan is super hot, brush it with olive oil.
Place the chicken skewers on hot grill pan and girll for 8 mins. Flip them over and let other side grill for 8 minutes too.
While other side is grilled, brush the top with thick coating of prepared BBQ sauce.
Flip the skewers again and let the saucy side grill for 8 more mintes.
Brush the top side with another thick layer of BBQ sauce and after 8 minutes, flip the skewers again to let them grill for final 8 minutes.
Once the chicken cubes are nicely charred on the edges, your BBQ chicken skewers are ready to serve!
