Sweet Potato Pie

Sweet Potato Pie

1/4 cup butter or margarine, softened
1 cup sugar
2 eggs, separated
1 1/2 cups cooked mashed sweet potatoes or pumpkin (fresh or caned)
3/4 cup evaporated milk
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 unbaked 9-inch pie shell

Preheat oven to 350. Cream butter with a mixer and add 3/4 cup sugar. Beat until blended. Add egg yolks. Beat. Stir in sweet potatoes, milk, vanilla, cinnamon, nutmeg and ginger. Beat egg whites. When foamy add 1/4 cup sugar a little at a time. Beat until stiff. Fold into sweet potato mixture. Put in pie shell and bake about 40 minutes. Make sure it’s set before removing from oven. Cool. It’s great topped with whipped cream.
